Double Chocolate Cheese CakeCrust
1 C. crushed chocolate cookies (Oreo crumbs)
3 tbsp melted margarine or butter
Mix together and press into 9 inch springform pan, bake at 350F for 10 minutes
3 – 8 oz cream cheese(not the light) at room temperature
¾ C. white sugar
1 tsp Vanilla
3 oz white chocolate
3 oz semi-sweet chocolate
2 tbsp Raspberry Schnapps
Blend cream cheese and sugar with electric mixer. Add eggs 1 at a time and blend well after each addition. Add vanilla and blend in with mixer. Place ½ the batter into a 2nd bowl. Put melted white chocolate and raspberry schnapps in first bowl and mix well. In 2nd bowl, add in melted dark chocolate and mix well. Place dark chocolate batter over the crumb crust. Carefully spoon (tea Spoon) the white mixture over the dark chocolate. Spoon slowly or the white will sink to the bottom of the dark.
Bake at 425F for 10 minutes. Reduce to 250f for 30 – 35 minutes.
¾ C. whipping cream / 6 oz semi-sweet chocolate
In a small heavy sauce pan, bring whipping cream to a simmer over low heat. Add chocolate and stir until melted and smooth. Cool slightly and spoon over cooled cake. Decorate with strawberries.
